Locally called Kape Musang Kopi Luwak, Philippine Civet Coffee is produced in the highlands of Benquet region in Philippines at a height of 1800 to 1970 meters above sea level. What makes this coffee so rare, expensive and unique? Is it because locals trek deep into forests to handpick the cherries from a rare bush? The answer is 'NO'. It is not the hard work of people that makes these coffee beans so special; it the work done by the animal called civet that makes civet coffee exceptional. The most interesting fact about the rare civet coffee beans is that they are collected from the faeces of civet.
Civet known as Luwak in Philippine is a cat like animal that climbs the coffee tree to eat the coffee cherries. It eats just the fleshy part of the coffee cherries and passes the beans inside. The enzymes in its stomach when work on the beans add the stimulating aroma and flavour to them. These coffee beans are later collected from the civet dung by the local tribes in Philippines- Kankanaey and Ibaloi tribes. Then the civet coffee beans are thoroughly washed and sundried followed by the common processes of roasting and brewing.
The process of gathering, roasting and brewing of civet coffee involves a lot of labour and these coffee beans are not available in abundance, therefore the cost of civet coffee usually range between USD100 to USD600. Because of the high cost Philippine Civet Coffee is not readily available in market. Courtesy to the online sellers of coffee, civet coffee is now available at the doorstep.
