These nocturnal cats eat the cherries but pass the beans through and out of their stomach. In the process of the passage the beans are fermented in the gastric juices of the cat imparting to the coffee its typical aroma and taste. The coffee is well known for its rich flavor with subtle hints of earth, dark chocolate, wood and fruit. It has muted acidity and is suggestive of nuts.
