The Geisha coffee with its aroma of cocoa and lavender and a hint of molasses is both rare and exotic. Of Ethiopian origin it's a very ancient and wild coffee that's grown on a plantation in Costa Rica close to the Panamanian border along with other coffees. Its profile is very soft and delicate. It also attracts attention owing to its aromatics that are complex but discreet. The plantation where it’s grown is typical since it grows several kinds of coffee from all over the world. This is unique since coffee is grown as in a botanical garden with its vivid flower beds.
One of the rarest of coffees similarly is the Kona coffee from Hawaii that's rare because it's grown in only 150 acres of land. The Jamaican Blue Mountain and the New Caledonian coffee are also rare. But, the Kopi Luwak from Philippines, India and Indonesia is among the rarest of coffees for a variety of reasons.
Kopi Luwak is rare because of the manner in which it's produced. The Luwak is a civet cat with a great greed for the red and sweet coffee cherries with the beans inside. These nocturnal cats eat the cherries but pass the beans through and out of their stomach. In the process of the passage the beans are fermented in the gastric juices of the cat imparting to the coffee its typical aroma and taste. The coffee is well known for its rich flavor with subtle hints of earth, dark chocolate, wood and fruit. It has muted acidity and is suggestive of nuts.
