Many bottles you find in supermarkets contain balsamic “style” vinegar. The real deal only comes from Modena and Reggio in Italy and is controlled by very strict government standards.

Genuine balsamic, a splendid nectar, comes at a steep price. A 3-ounce bottle can sell from $60.00 to $400.00 depending on the age. Look for “Aceto Balsamico Tradizionale di Modena” to determine authenticity .

Balsamic vinegar is used in a wide varieties of ways. It can be used to form a glaze, as a salad dressing, reductions, or just to dip a French loaf. Balsamic vinegar can be used to enchance the flavour of any dish.

Balsamic vinegar is a necessity for any cook and once you begin to use it, there is no turning back. You certainly don't require the most expensive bottle of balsamic to enjoy it. Just ask at your local grocer for a reasonbly priced bottle.
